ITALIAN RED PIED (PEZZATA ROSSA) FOREQUARTER TOMAHAWK
The forequarter Tomahawk—cut from the rib section—is an exceptionally flavorful product that is heavier than the hindquarter version. Furthermore, because it comes from the front of the animal, the meat can be tougher if not properly prepared and cooked. It features a large, long bone that creates a striking visual impact; its distinctive name alludes to the silhouette of traditional Native American war axes.
