Meet the Founder

"My name is Giovanni Ciacci. I grew up around a grill."

I was born in the Marche, twenty-five kilometers from the sea, in a family where meat was not a product but a ritual. Sundays meant my grandparents’ farm: the animals raised on the land, the cuts prepared by hand, the long evenings around the grill where the elders taught us that fire, salt and patience are all a great piece of beef ever asks for.

I left to study management in London — and I learned something no business school teaches: that the rest of the world was eating better beef than we were told existed. Argentine parrillas, Spanish asadores, London’s aged-beef temples. I travelled across Europe with a notebook and an appetite, and I came home with one idea.

In Fano I opened Kilometro 25: a steakhouse where tradition meets what I had seen abroad. We built our own dry-aging cellar, sourced from Galicia, Japan, the American Midwest and our neighbours’ pastures in the Marche, and grilled every cut for the toughest critics there are — the people at our tables. Today Kilometro 25 is recognized among the best in the Marche for the quality of its meat.

Before we shipped a single steak, we grilled thousands of them for the toughest audience there is: people sitting at our tables. Kilometro 25 is our restaurant on the Adriatic coast — the dining room where every cut in this shop earned its place, and the cellar where our dry-aging happens.

Before you ask.

How is the meat shipped and does it stay cold?
Every order is vacuum-sealed within minutes of cutting, packed in an insulated box with dry ice or gel packs, and shipped via DHL Express. The cold chain holds 0–2 °C for over 96 hours — well beyond any transit time. Most orders include a temperature indicator so you can verify on arrival.
Within the EU: nothing, ever. Outside the EU (UK, Switzerland, USA, UAE, etc.) import duties and local taxes may apply and are the customer’s responsibility. We include all export documentation and health certificates.
Chilled cuts go straight to the fridge and are best within 10 days. Frozen cuts: thaw slowly in the refrigerator for 24–48 hours in the sealed bag — never at room temperature or in a microwave. Once thawed, cook within 3 days.
The whole cut rests on the bone in our cellar at 1–3 °C and ~80% humidity for 60 days. Moisture evaporates, enzymes tenderize, flavor concentrates. We trim the crust before shipping — you receive only the perfect heart of the cut.
As perishable goods, meat is legally excluded from the standard EU right of withdrawal (Art. 59 Directive 2011/83/EU). But our Freshness Guarantee covers you completely: if anything arrives compromised, we replace or refund within 24h of your claim.
Orders placed before 12:00 CET Monday–Thursday are cut and shipped the same or next business day. We don’t ship Friday–Sunday to avoid weekend warehouse stops — your meat never waits in a depot.
